Raw Cashew Cookie Balls - Larabar Twin!


These could not be any easier to make, and if you love the "Cashew Cookie" Flavor of Larabars as much as me and my kids, you will be in heaven!  I am stalking my freezer with various lunchbox items for the the coming week, and these are item number 3!  Loaded with protein, but sweet enough to be a treat, you can feel good about feeding these to your family.  It is important that you use Medjool dates...there are the largest and their moisture content is what binds the bars together...other dates I have tried have failed to bind the bars properly...they have been too dry.  I even tried soaking them...but that was a failure too...so stick (no pun intended!) to Medjool....the BMW of all dates!

Makes about 15 balls, about a tablespoon each

1 cup cashews (I used raw)
15 Medjool dates (you may add more if it seems necessary)
pinch of salt

Pulse the cashews in a food processor until chopped.  Add in the dates, and whir until the mixture is easily pressed together!  Form into balls, refrigerate or freeze until ready to eat.  You may also press into a square 8 x 8 for bars, or even use cookie cutters for fun shapes your kids will love!  Separate layers with waxed paper within containers.
