Today I am spotlighting a recipe from a a fellow mom blogger. Her and I seem a lot alike in so many ways! Amber runs The Tasty Alternative, and this is her recipe featuring two of my very favorite things: pumpkin and chocolate! I made these yesterday with a few tweaks, and they turned out divine! Dense, fudgey, but still healthy! Of course my kids think it is a dessert...and it is...but this is a dessert that manages to sneak in all sorts of healthy ingredients! To see the original recipe, you can visit Amber here. I only switched out the milk for more pumpkin puree and used pecans in place of the walnuts. Oh, and I had to add a couple more tablespoons of cocoa powder to really up the chocolate intensity and 2-3 tablespoons palm sugar to compensate for the additional cocoa powder. I would recommend you grind the nuts in the processor until pretty fine (but not so long you make nut butter!) to hide the crunchy texture from picky kids. Thank you Amber for a delicious recipe!
Hi There Tessa~
ReplyDeleteYou're awesome! Thank you for the recipe highlight. Great job with the brownie...I love hearing how others substitute ingredients (saves another test batch, right). You must have some chocolate lovers in your house for sure! I thought my brownies were too chocolaty....not for my husband of course (or daughter), but for me, yes. I'm glad you found a healthy, decadent brownie for your family.
I was just talking with Scott last night about your blog and how glad I am to have found you.
I started alternative food blogging for several reasons, but I'll be honest and share the world of alternative cooking can get lonely and I so wanted to connect with other people who shared my passion, moreover, I was craving a connection to a community (this need is clearly in my blood - hence my profession). I'm moving into that direction here in the town I live (in the beginning stages of organizing an allergy-free cooking group). And I love and simply adore my girlfriends, but there is an undeniable disconnect when it comes to food - we are worlds apart in this respect.
So here I've found a cyberspace pal that shares my passion. How wonderful is that!
Thank you, Tessa, for sharing your dedication and love for food, family and health.
Warmly,
--Amber
